Coconut Rice with Cilantro
Serves: 4 or more

Ingredients
- 1 cup jasmine rice Add to list
- 1 cup light coconut milk Add to list
- 1 cup water Add to list
- 1 teaspoon salt Add to list
- 1/4 cup cilantro, finely minced Add to list
Preparation
Combine the rice, coconut milk, water and salt in a large saucepan. Bring to a boil, stirring once. Reduce the heat to very low, cover the saucepan, and simmer for 18 minutes, stirring once or twice during cooking.
Remove from the heat and let stand covered for 5 minutes, or until all the liquid is absorbed. Use a fork to fluff the rice and stir in the cilantro.
Serve with Stir-fried Chicken Ribbons with Vegetables and Fresh Plums.
