Citrus Arugula Salad

Wheat-free
Substitute lettuce, spinach or even young mizuna mustard greens in this simple, zesty salad.
Ingredients
Salad
- 1 bunch arugula Add to list
- 1 grapefruit Add to list
- Slivered almonds (optional) Add to list
For the dressing:
- 1/2 cup olive oil Add to list
- 1/4 cup fresh-squeezed orange juice Add to list
- 1/2 teaspoon fresh orange zest Add to list
- Salt and pepper to taste Add to list
Preparation
Salad
Wash and drain the arugula, separating it into leaves. Peel and section grapefruit. Slice into bite-size pieces.
In a large bowl, dress the salad to your preference and add grapefruit pieces. Garnish with slivered almonds if desired.
Dressing
In a small bowl, whisk together dressing ingredients.
