Yield: 24 (1-inch) balls
Heat soymilk or milk, sugar and cocoa powder over medium heat, stirring constantly, until the mixture begins to bubble.
Remove from the heat and immediately add peanut butter, butter, vanilla and salt. Stir to mix well. Stir in oats to coat.
Let cool and roll into 1-inch balls.
Turtles can easily be made ahead and frozen.
