Chocolate Turtles

Ingredients
- 1/2 cup soy milk or milk Add to list
- 3/4 cup sugar Add to list
- 4 tablespoons cocoa powder Add to list
- 1/2 cup peanut butter Add to list
- 1/3 cup organic butter Add to list
- 1 teaspoon pure vanilla extract Add to list
- Pinch of salt Add to list
- 2 to 2 1/2 cups quick rolled oats Add to list
Preparation
Heat the soy milk or milk, sugar and cocoa powder over medium heat, stirring constantly, until the mixture begins to bubble. Remove from heat and immediately add peanut butter, butter, vanilla and salt. Stir to mix well. Stir in the oats to coat. Let cool and roll into 1-inch balls.
Turtles can easily be made ahead and frozen.
