Cha Nam Manao Khing (Ginger Limeade)
Yield: 4 to 6 glasses
This refreshing summer drink strikes the balance between sweet, tart and spicy.
Bring water to a boil in a saucepan set over medium-high heat.
Add ginger and reduce temperature to medium. Boil for 15 minutes. Remove ginger pieces and stir in sugar; stir until dissolved. Let cool to room temperature, then stir in lime juice.
Place sliced limes in a pitcher. Add ice cubes, and then pour in limeade. Serve chilled.
