Braising chard gives it a mellow flavor that can be enhanced with garlic and a squeeze of fresh lemon. Sided with grilled salmon, this recipe is a delicious taste of summer’s local flavor.

Wash greens thoroughly by rinsing in lots of lukewarm water. Drain and chop greens into 3-inch pieces.

Heat oil in a large saucepan set over medium heat. Sauté garlic for 1 minute, until pale gold, then add greens. (They do not have to be dried off, as the water will evaporate during cooking.) Cover and cook over medium heat for 4 to 5 minutes, stirring once in a while to coat all the greens with garlic and oil.

Sprinkle with salt and serve with lemon wedges.
