Blue Cheese Vinaigrette
Yield: about 1 1/2 cups
A creamy-tart dressing that's great over fresh greens.
Place shallots, agave syrup and red wine vinegar in a stainless steel mixing bowl. While whisking, drizzle in oil until emulsified (it's OK if it breaks, just re-whisk). Mix in cheese and season with salt and pepper.
