Blue Cheese Vinaigrette

Ingredients
- 1 tablespoon minced shallot Add to list
- 2 tablespoons agave syrup Add to list
- 4 tablespoons red wine vinegar Add to list
- 3/4 cup olive-sunflower oil blend Add to list
- 1/4 cup crumbled blue cheese Add to list
- Salt, to taste Add to list
- Freshly ground black pepper, to taste Add to list
Preparation
Place shallot, agave syrup and red wine vinegar in a stainless steel mixing bowl. While whisking, drizzle in oil until emulsified (it's OK if it breaks, just re-whisk). Mix in cheese and season with salt and pepper.
