Baked Squash with Lime Butter

Preparation

Preheat oven to 350° F. Rinse squash before cutting, then cut in half lengthwise and remove seeds.

Place cut-side down in a glass baking dish and add water to a depth of 1/4 inch. Bake, covered, 20 to 30 minutes.

In a small bowl, combine butter, lime juice, honey or sugar, and chili powder. Blend well. If desired, season with salt and pepper. Spoon the butter lime sauce into baked squash cavities and serve hot.
