Baked Squash with Lime Butter

Ingredients
- 2 Delicata or Sweet Dumpling squash Add to list
- 3 tablespoons butter, softened Add to list
- 1 tablespoon lime juice Add to list
- Pinch honey or sugar Add to list
- 1 teaspoon chili powder Add to list
- Salt and fresh-ground pepper to taste Add to list
Preparation
Preheat oven to 350° F. Rinse squash before cutting, then cut in half lengthwise and remove seeds.
Place cut-side down in a glass baking dish and add water to a depth of 1/4 inch. Bake, covered, 20 to 30 minut
In a small bowl, combine butter, lime juice, honey or sugar, and chili powder. Blend well. If desired, season with salt and pepper. Spoon the butter lime sauce into baked squash cavities and serve hot.
