Baked Eggs in Avocado

Eggs are baked in avocado halves and topped with your choice of cheese, bacon or salsa to create a quick and easy meal for breakfast or dinner.

Preparation

Preheat oven to 425° F. Line a baking sheet with parchment paper.

Cut the avocado in half and remove the pit (but leave the skin on). Using a spoon, scoop out a little bit of avocado from the center of each half to make room for the eggs. Place the halves on the prepared baking sheet.

Crack an egg into each avocado half; season with salt and pepper.

Bake until the whites are set and the yolks are to your liking, 10 to 15 minutes. Top with your choice of salsa, bacon, green onions or cheese. If you would like your cheese melted, sprinkle it over the top of the cooked eggs and place under the broiler for 1 to 2 minutes.
