Artichoke Lemon Pesto Salmon
The zesty flavors of lemon, Parmesan and garlic marry well with salmon’s rich, buttery meat.
Preheat your oven to 400° F.
Place salmon fillets, skin-side down, on a parchment-lined baking sheet. Spread pesto over the fillets to evenly coat.
Bake until the salmon easily flakes apart when pushed with a fork, about 15 minutes.
Serve with steamed veggies — such as broccoli, Brussels sprouts or carrots — or a side salad, and lemon wedges.
