On April 23 PCC members and guests met at St. Demetrios Hall and were treated to a wonderful meal. Recipes for the meal, along with a report by PCC Nutrition Educator Nick Rose on the night's menu and nutrition value are provided below.

The spring member meeting featured annual reports from the board and management on the state of our co-op. The four board candidates also shared their vision of PCC and why they were running.
At each member meeting, we present a segment on a topic about which we think members would like to learn more. This time we looked at the importance of organics — for the consumers, the farmers and the environment.
We were very fortunate to have two of the world’s leading scientists in sustainable agriculture research join us. John Reganold, Ph.D. is Regents Professor of Soil Science & Agroecology at Washington State University (WSU). He is an amazingly dynamic speaker who brought science to us in an engaging way.
Also joining us was Chuck Benbrook, Ph.D. Benbrook is Research Scientist at WSU’s Center for Sustaining Agriculture and Natural Resources. Both were instrumental in the establishment of the organic major at WSU — the first in the United States.
