Yellow Watermelon Salad
- 4 cups cubed seedless yellow watermelon (red watermelon works too)
- 3 cups cubed jicama or cucumber
- ¼ cup fresh lime juice
- Salt and pepper to taste
- Mint leaves, thinly sliced
- Toss all the ingredients together and serve immediately!
