Crocodile and Alligator
Frozen alligator or crocodile meat will keep in the freezer for up to three months. Thaw uncooked meat in the refrigerator overnight. Never thaw at room temperature. To thaw more quickly, place alligator or crocodile (wrapped in a watertight bag) under cold water. Change the water often. For fastest thawing, use the defrost cycle of your microwave, allowing two to five minutes per pound (454g) with equal standing time in between zaps.
